Gravlax – Marinated Salmon

I like everything that has to do with salmon! So, a pickled salmon falls exactly into this category of favorite fish! In addition, it is very easy to make and tastes just wonderful!
I have already made a Gravlax before, but it was pickled quite differently. This time I used less salt, but much more seasoning. This gives it a fantastic flavor and everyone will like it. I think such a beautiful fish should have its place of honor on every buffet!

Ingredients
For a whole Salmon side:
Salmon with Skin
3 heaped tbsp Salt
2 tbsp Brown Sugar
1 tbsp Coriander Seeds
1 tsp Fennel Seeds
1/4 tsp Mustard Seeds
1/4 tsp Cumin Seeds
1 tbsp dried or fresh Dill
Zest of 1 Blood Orange or normal Orange

Step 1
Put all seeds into a mortar and crush them. They should not be crushed completely. Then mix them with the salt and the brown sugar.

Put the salmon with the skin down into a big glass tray. Now press the seasoning onto the salmon. Add the orange zest!

Put the dish with the salmon into a big freezer bag and close it tightly. I also wrapped it into cling-foil to remove all air.

The salt will remove the water from the fish and the seasoning will make the salmon really tasty. The salmon will be kind of pickled, so you can keep it longer. Cut the salmon with a very sharp knife and serve with toasted bread.
