Baked Apricots with Ice-Cream

I love apricots, but here in Hong Kong they are either expensive or not really good. But in Europe they are delicious and whenever I am there I have some at home. It doesn’t matter if you eat them just like that, or bake a pie, cook jam or use them for Desserts.

I love the acidity of this wonderful fruit and if I could choose, I would like them to be available all year long! I made this dessert, it is very easy to do and quickly prepared. So, there is no problem, when you get visitors, just look into your cabinet, most ingredients are already there. I served it with Ice-Cream

Ingredients

  • 6 big Apricots

  • a Handful Almond slivers

  • some brown Sugar

  • some Butter

  • some Honey

  • some Ice-Cream

Instructions

Step 1

Grease a glass gratin dish. Wash the apricots and half them, remove the stone.

Step 2

Put them into the gratin dish and sprinkle with a little brown sugar. Put a small flake of butter onto each apricot. Sprinkle with some almond slivers. Bake in the oven at 180 C for 10-15 minutes.

Step 3

Put the baked apricots into dessert plates, add some ice-cream if you like and sprinkle with honey. Serve warm.

This dessert can also be made with peaches or nectarines!
