Marzipan Sheet Cake

My family loves marzipan and one family member very much! That’s why I baked him a marzipan cake for his birthday.

It is made in three layers one for the dough, one is chocolate, and one is the marzipan filling. The cake gets very airy and was eaten faster than I could take pictures!!

Ingredients

For a square Cake dish of approx. 35/35 cm:

  • 150 g soft Butter

  • 150 g Sugar

  • 2 tsp Vanilla Sugar

  • 3 Eggs

  • 150 g Flour

  • 1 tsp Baking Powder

  • In-between:

  • 150 g Milk Chocolate

  • 20 g Coconut Fat

  • For the Filling:

  • 200 g Marzipan

  • 2 tbsp Orange Liqueur

  • 125 g soft Butter

  • 60 g Flour

  • 2 tbsp Cornstarch

  • 2 Egg-Yolk

  • 3 Drops Bitter Almond Essence

  • 4 Egg-whites beaten stiff

Instructions

Step 1

For the dough beat the soft butter with the sugar and vanilla sugar. Add the eggs and mix. Then mix the flour with the baking powder and fold in. Layer the baking tray with baking paper and fill the dough in, slightly flatten it.

For the middle part, melt the chocolate with the coconut fat and pour it over the dough.

For the filling grate the marzipan and beat it with the orange liquor and the soft butter. Add the egg-yolks and the bitter almond essence. Then mix the flour and cornstarch in.

At the end fold in the beaten egg-whites. Pour the filling on top of the chocolate. Flatten slightly.

Bake in the oven at 180 C for approx. 40 minutes. Let cool completely before serving.
