Chicken in Red Wine ~ partly cooked in the Slow Cooker

Chicken in Red Wine ~ partly cooked in the Slow Cooker. An easy recipe that is particularly suitable for days when you don’t have much time. If you have a slow cooker, you can cook it in it and then roast it in the oven until crispy. It also works without a slow cooker, just cook everything in a roasting pan.

I served it with polenta/corn grits and made a dessert from the gravy with sour cream.

Ingredients

  • 1 Chicken, cut in pieces

  • 6 Carrots

  • 6 Garlic cloves

  • 200 ml Red Wine

  • Salt and Pepper

  • Rosemary

  • Paprika

  • Oregano

  • some Olive oil

  • approx. 200 ml Chicken Broth

  • 100 ml Sour Cream

  • some Cornstarch

Instructions

Step 1

Rub the chicken pieces with the spices and a little olive oil.

Place the peeled garlic cloves in the slow cooker (or roasting pan) and add the chicken on top.

Peel the carrots and cut into 2-3 cm long pieces and add.

Pour in the wine (if the chicken is not covered with liquid, pour in some of the chicken stock) and cook on HIGH for 1 hour. (In the roasting pan at 180 C degrees in the oven)

Then transfer the chicken pieces and carrots from the liquid to a gratin dish and roast in the oven at 180°C for about 40 minutes.

Meanwhile, reduce the roasting liquid in a pan by 1/3, mix in a little sour cream, season and thicken with cornstarch. Serve the chicken hot with, for example, polenta and the sauce.
