Healthy Date Pralines

I still have dates from Muscat/Oman and need to use them up. So, I made healthy date pralines.
Healthy because both fresh and dried dates have a high nutrient content. They contain a lot of iron, are a good source of potassium, protein, fiber, calcium and provide vitamins A, B and C. Dates also have an anti-inflammatory effect and protect against infections.
The sugar content of ripe dates is around 80 percent. The natural carbohydrates glucose, fructose and sucrose in dates invigorate the body and provide it with plenty of energy in a short space of time. Ingredients
350 g pitted dried Dates
1 tbsp Cocoa
2 tbsp Coconut Oil
2 tbsp Vanilla Extract
1 Pinch of Salt
2 tbsp Cocoa for Decoration
2 tbsp Coconut flakes for Decoration
Instructions

Step 1
Chop the dates with the mixer or TM6 together with the cocoa, vanilla extract, coconut oil and a pinch of salt. In the TM6, blend for 12 seconds/blend mode/speed setting 8.

Step 2
Put the cocoa and grated coconut each in a small bowl. Shape the date mixture into small balls in the palms of your hands, then roll in either the cocoa or the grated coconut.

Step 3
Seal in a tin and store in the fridge.
