Cheese Pie – typical Swiss!
A Chäs Wähie (cheese pie) is a MUST in Switzerland! Pies are very traditional there anyway, there are sweet and hearty types. Often the sweet ones are a Zvieri (snack at 4pm with coffee), while the savory ones are whole meals. It is like everywhere in the world that every Swiss housewife has her own recipe, and hers is always the best! For the Chäs Wähie, the cheese mixture is crucial.
My mom always made it with Emmenthaler cheese, which I don’t like at all, but my dad loved it. So, I never ate this pie! Only later, when I had to cook myself, I found “my” mixture.
Ingredients
For a rectangular Pie of approx. 20/36 cm:
1 rolled out Puff Pastry
500 g Cheese mixture, coarsely grated (mixture of Gruyere, Appenzeller and Tilsiter – or other Swiss hard cheeses as desired, raclette cheese also works)
3 Eggs
1 red Onion, chopped
200 g Nature Yogurt
3 tbsp Flour
Paprika
Nutmeg
