Caprese Salad with Mozzarella Foam

Such a simple Caprese salad is something delicious. But it can also be served quite differently. Why not foam up the mozzarella?

It is very simple and is really a super fast appetizer that can also be a highlight on a buffet. I served it in glasses since I had to cook for a smaller army again. This way you can serve the “salad” in layers. Not only does it look good in color, but everyone enjoyed it!

Ingredients

  • 60 g whole meal Grissini

  • 2 Mozzarella Balls

  • 150 g Nature Yogurt or Sour Cream

  • 2 tbsp Olive Oil

  • Salt and Pepper

  • 2-3 Tomatoes, diced

  • 1 Handful Basil Leaves

  • 1 Handful Pinenuts

Step 1

Roughly chop the grissini and mix them with 1 tablespoon of olive oil, then divide them into the 8 glasses.

Step 2

Put the mozzarella in the blender with the yogurt or sour cream, salt and pepper and blend coarsely, adding 1 tablespoon of olive oil. Divide this mixture among the 8 glasses. Chop a few basil leaves and sprinkle on top.

Step 3

Cut the tomatoes into small pieces and distribute them on the 8 glasses. You can add some basil, some pine nuts or some pesto. Store in the refrigerator until serving.
