Mascarpone Cream with pureed Berries

For my dinner I needed a quick, easy, fruity dessert and I found that at Saskia rund um die Uhr. It is really done in 5 minutes, and you can prepare it super in advance. You can vary with the berries or even use cherries, maybe I’ll try it with apricots next time.

 In any case, I am grateful to Saskia for this fine, quick dessert, which is now serve more often.

Ingredients

  • 250 g Mascarpone

  • 250 g Quark/Curd or Fromage blanc

  • 3 tbsp Sugar (I used 2 tbsp Sugar and 1 tbsp Vanilla Sugar)

  • 250 g frozen Berries

  • 3 tbsp Sugar

Instructions

Step 1

Let the berries thaw, then put them into a blender with 3 tbsp sugar and blend.

Step 2

Mix Mascarpone, curd and sugar (or sugar and Vanilla Sugar).

Step 3

Divide the curd mixture into glasses, top with the blended berries and top with some fresh berries. Serve cold!
