Omelet with Avocado and smoked Salmon for Breakfast. Breakfast never has to be boring; there are so many things you can do with it.
I usually decide in the evening what I still have in the refrigerator that needs to be used up. Here, I still had one very ripe avocado and a little smoked salmon. I always have eggs at home, so I cooked an omelet and filled it.
Oh, I was so full afterwards! You can also enjoy the omelet for dinner or as a snack.

Ingredients
2 Omelets
2 Eggs
50 ml Milk
approx. 100 g Flour
1 Pinch of Salt
1 very ripe Avocado
1 tbsp Lemon Juice
Salt
approx. 100 g smoked Salmon

Step 1
Mix the ingredients for the omelets together. Since I tend to do this by eye, you may need to add more milk or flour until you have a thick batter.

Fry 2 pancakes or omelets in a little oil.

Mash the avocado and mix with salt and lemon juice. Spread this guacamole on the pancakes.

Then place the salmon on top and roll up. Serve immediately.
