Die Sonne scheint, es ist warm, es ist herrlich! Herrlich sind auch die Farben, in denen das Mediterranes Gemüse mit Feta leuchtet! Knallrot, sonnen-gelb, dunkelviolett, grün, einfach zum Anbeissen! Ich habe diese verschiedenen Farben in einem Topf gekocht und mit weissem Feta belegt, es sah aus wie Schnee im Sommer.

The sun is shining, it’s warm, it’s wonderful! The colors in which the Mediterranean vegetables shine are also wonderful! Bright red, sunny yellow, dark purple, green, simply to bite into! I cooked these different colors in a pot and topped it with white feta, it looked like snow in summer.

Mediterranes Gemüse mit Feta

Fuer 2 Personen als vegetarisches Mahl:
1 gelbe Pepperoni
1 rote Pepperoni
1 grosse Aubergine
3 Knoblauchzehen, gehackt
1 rote Zwiebel, gehackt
1 Fleischtomate
2 Zweige Basilikum
Salz und Pfeffer
Paprika
Oregano
Chili Flocken
50 ml Weisswein oder Brühe
100 g Saure Sahne
20 g Feta in Stücken
etwas Olivenöl

Die Aubergine der länge nach in Streifen schälen. Dann in Viertel schneiden und jeden Viertel in dünne Scheiben schneiden. Das Kerngehäuse der Pepperoni entfernen und die Pepperoni dann in Viertel und danach in Streifen schneiden. Die Tomate kleinschneiden, ich habe sie vorher geschält.
Etwas Olivenöl in einer Pfanne erhitzen und die gehackten Knoblauchzehen und Zwiebel darin anbraten. Die Auberginen zugeben und kurz anbraten, dann die Pepperoni und Tomate zugeben. Alles sehr gut würzen! Zuerst ca. 5 Minuten gut braten, dann mit dem Wein oder der Brühe ablöschen und ca. 20 Minuten köcheln lassen. Zuletzt die Saure Sahne zugeben, den Basilikum hacken und reinmischen und auf Teller geben. Die Feta Stücke darauf streuen und servieren.

For 2 Persons as a vegetarian Meal:
1 yellow Pepperoni/Capsicum
1 red Pepperoni/Capsicum
1 big Aubergine/Eggplant
3 cloves of Garlic, chopped
1 red Onion, chopped
1 Beef Tomato
2 twigs Basil
Salt and Pepper
Paprika
Oregano
Chili flakes
50 ml White Wine or Broth
100 g Sour Cream
20 g Feta, diced
some Olive Oil

Peel the eggplant length wise, but leave some stripes of skin. Then cut it into quarters and slice those. Remove the seeds of the capsicum and quarter it, then cut slices. Cut the tomato into small pieces, I even peeled it.
Heat some olive oil in a pan and fry the chopped garlic and onion. Add the eggplant and fry well, then add the capsicum and tomato. Season well! Go on frying for 5 minutes, then add the white wine or broth and let cook for 20 minutes on small heat. Lastly add the sour cream and chopped basil and mix well. Serve with some feta cheese on top.
