Käse Engelsaugen Plätzchen mit Portwein Gelee – Cheese Thumbprint Cookies with Port Jelly

2 Mins read

You can never have enough finger-food at home, if guests arrive you have them ready to serve. But puff pastry finger-food every time can be boring. Also, puff pastry should be eaten the same day, as it tends to get lumpy with time. This is not the case with these cheese cookies, you can keep them in a tin or box up to a few days. You can fill them with anything you like, for example tomato jam, Chutneys, or chili jam, but I still had some of my Port Jelly and that fit perfectly!

Käse Engelsaugen Plätzchen mit Portwein Gelee

Für ca. 25 Plätzchen:
225 g weiche Butter
100 g Gruyère Käse, gerieben
100 g Appenzeller Käse, gerieben
½ TL Chili Pulver
1 TL frischer Rosmarin, gehackt
½ TL Salz
15 g Zucker
1 Ei
200 g Mehl
120 g ganz feines Maismehl

For approx. 25 Cookies:
225 g soft Butter
100 g Gruyère Cheese, grated
100 g Appenzell Cheese, grated
½ TL Chili Pulver
1 TL frischer Rosmarin, gehackt
½ tsp Salt
15 g Sugar
1 Egg
200 g Flour
120 g fine Corn Meal
5 tbsp Port Jelly

Mix the soft butter with the sugar and salt. Add the cheese, herbs, and chili powder, then add the egg and mix. Mix the flours together and add them, knead well together. Put into the fridge for 30 minutes. Form small balls with the dough and spread them on a baking tray not too close together. With the back of a wooden spoon make dents into the middle of each cookie. You can also do that with the thumb. Bake in the oven at 180 C for 20-30 minutes. In an airtight box they can be stored for 4-5 days.
