Rösti aus Potato Skin Füllung mit Spiegelei – Rösti from Potato Skin Filling with fried Egg

2 Mins read

At Zorra on her blog Kochtopf there is an Event called „Fruehstuecksideen“. It is hosted by Ilka from Was machst du eigentlich so?!. For this event I have already cooked my Shakshuka  and today I bring you a special breakfast. It is cooked with leftovers! I always try to invent new dishes out of leftovers; I also try not to throw anything! That’s why I used up the leftover potato skin filling and made a Rösti with it. I served it with an egg on top!

Rösti aus Potato Skin Füllung mit Spiegelei

Reste dieser Füllung
20 g Butter
2-3 Eier
Etwas Meersalz

Leftovers of this filling
20 g Butter
2-3 Eggs
Some Sea salt

Melt 10 g butter in a wide pan and add the leftover filling. Flatten to a cake and fry for 5-8 minutes. Then with the help of a plate you turn it out, just like a real roesti. Melt the rest of the butter and slip the cake into the pan, fry for another 5-8 minutes. Turn out of the pan. Fry your eggs in the same pan. Sprinkle with sea salt and serve them on the “roesti”.

Tips:
– Mix the eggs into the filling and fry all together.
– Serve with poached eggs.
– Add some grated cheese at the end and let melt.
