Dal Tadka – Indisches Linsengericht – Indian Lentil Dish

Dal heissen die Linsen in Hindu und Tadka heisst temperieren, also eine Wärmebehandlung der Gewürze, die dann ihr natürliches Öl auslassen. In Indien wird dies sehr viel praktiziert. Und hier bei diesem einfachen Dal Tadka – Indisches Linsengericht wird das auch gemacht. Glaubt mir, das passt wunderbar und so ist dieses Gericht zu einem meiner Lieblingsgerichte der indischen Küche geworden! Es lohnt sich, dies nachzukochen!

Dal means lentils in Hindi and tadka means tempering, to heat up. By doing so, the spices will let their natural oils out and the taste will get stronger. This is a technic often done by the Indian. And here in this recipe this is done too! Believe me, it makes it so much more delicious! This is one of my favorite Indian dishes, so tasty so wonderful. Once cooked, you will cook it all the time!

Dal Tadka – Indisches Linsengericht

Für 4 Personen:
Für die Linsen:
200 g gelbe Linsen
1 Zwiebel, gehackt
2 Tomaten, gehackt
1 EL Ingwer, gerieben
1 TL Kurkuma
½ TL Chili Pulver
½ TL Garam Masala
1 EL Koriander Blaetter, gehackt (man kann auch Petersilie nehmen)
Saft 1 Zitrone
Ca ½ TL Salz
800 ml Gemüse Bouillon/Brühe

Für die Tadka:
2 EL Öl
1 TL Kreuzkümmel Samen
6 Knoblauchzehen, fein gehackt
3 Lorbeer Blaetter

Die Linsen mit der Zwiebel, den Tomaten, Ingwer, Kurkuma, Salz und Chili Pulver in der Brühe aufkochen. Dabei mehrfach umrühren um alle Linsen gut einzuweichen. Sobald es kocht, die Hitze runterstellen, den Deckel auf den Topf geben und 15 Minuten koecheln lassen. Hin und wieder umrühren, um das Ankleben zu vermeiden. Dann vom Herd nehmen und das Garam Masala, Koriander und den Zitronensaft unter festem Umrühren zugeben.
Für die Tadka das Oel in einer flachen Pfanne erhitzen und die Kreuzkümmel Samen zugeben. Sobald sie anfangen zu spucken den Knoblauch und die Lorbeer Blaetter dazu geben. Kurz braten lassen und von der Hitze nehmen. Sofort ueber die Linsen geben und evt mit etwas mehr Koriander garnieren. Sofor servieren, am Besten mit Basmati Reis. Es passt aber auch hervorragend zu Naan Brot!

For 4 Persons:
For the Lentils:
200 g yellow Lentils
1 Onion, chopped
2 Tomatoes, chopped
1 tbsp Ginger, grated
1 tsp Turmeric
½ tsp Chili Powder
½ tsp Garam Masala
1 tbsp Coriander Leaves, chopped (you can also use Parsley)
Juice of 1 Lemon
Approx. ½ tsp Salt
800 ml Vegetable Bouillon/Broth

For the Tadka:
2 tbsp Oil
1 tsp Cumin Seeds
6 cloves of Garlic, chopped finely
3 Bay Leaves

Put the lentils, onion, tomatoes, ginger, turmeric, salt, and chili into the vegetable broth and heat up. Whisk several times to get all lentils into the broth. As soon as it boils turn the heat down, cover the pan and let simmer for 15 minutes. Whisk several times again, to avoid sticking to the pan. Take from the heat and add the garam masala, lemon juice and coriander leaves. Mix well.
For the Tadka heat the oil in a flat pan. Add the cumin seeds and wait until they spit, then add the garlic and bay leaves. Let fry for a short while, then take from the heat. Pour over the lentils and serve immediately. You may garnish with more chopped coriander. Serve it with Basmati rice or even better, with naan bread!
