Sweet Potato Cake with Spinach

I made a sweet potato cake with spinach and ham cubes because it is gluten-free and high in protein. I used the sweet potato as the base and dough, it doesn’t get hard and crispy, but stays more or less like mashed potato. You can then fill this cake with whatever you like.

In my case it was a mixture of eggs, spinach and ham cubes. It tasted really good!

Ingredients

For a Cake with a diameter of 22 cm:

  • 1 kg Sweet Potatoes

  • 4 tbsp Rice Flour

  • 4 Eggs

  • 300 g fresh Spinach

  • 100 g diced Ham

  • 200 ml Milk

  • Salt and Pepper

  • Chili Powder

Instructions

Step 1

Steam the sweet potatoes and then press them through the potato ricer. Season the mixture and mix with the rice flour.

Line a cake tin with baking paper and press the mixture into it, pulling up the sides.

Step 3

Bake the base in the oven at 180 C for 15 minutes.

Schritt 4

Beat the eggs with the spices and mix in the spinach and ham cubes. Pour this filling onto the pre-baked sweet potatoes and bake in the oven for another 20 minutes at 180 C degrees. Serve warm.
