Geroestete junge Moehrchen – Roasted young Carrots

1 Mins read

My daughter found these beautiful and colorful carrots on the local market and I knew immediately, how to cook them. No need for a lot of fuss, just roast them, so they will keep the colors.
It is well known, carrots  have a positive impact on our eyesight. That’s because of the carotene which can also be seen by the color of the vegetable. The brighter the color the more nutrients.
But there is much more in a carrot. They include levels of iron, potassium, and calcium. Did you know that late carrot varieties contain more fiber than the spring carrots? And there is more sugar in the spring carrots.

It is so easy:
scratch the skin off the carrots with a kitchen knife. No need to peel them. Leave some of the stalks on them. Grease an ovenproof dish and put the carrots onto it. Sprinkle with sea-salt and pepper and add some chopped herbs to taste. Then sprinkle with some olive oil.
Bake at 180 C for 40 minutes and serve hot.
