Vegetable pies are always good! But I get bored of just dice the vegetables and throw them onto the pastry. So I decided to do it differently this time. I arranged the vegetables like a flower and used the color of the skin to make a colorful and nice pie. We say, you eat also with your eyes! And I am sure this pie is a highlight on the table!

Fuer ein Waehenblech von 32 cm Durchmesser:
1 grosse Zucchini
1 Aubergine
1 Karotte
5-6 Pilze
2 Tomaten

1 ausgewallter Blaetterteig fuer diese Blechgroesse

Fuer den Guss:
100 g Ricotta
250 g Creme Fraiche mit Kraeutern
2 Eier
30 g geriebener Parmesan
Salz und Pfeffer
Paprika und Rosmarin
etwas Chilipulver

Heiss servieren.

For a pie dish of 32 cm diameter:
1 big Zucchini
1 Eggplant
1 Carrot
5-6 Mushrooms
2 Tomatoes

1 ready rolled out piece of Puff Pastry

For the savory custard:
100 g Ricotta
250 g Creme Fraiche with Herbs
2 Eggs
30 g grated Parmesan
Salt and Pepper
Paprika and Rosemary
some Chili Powder

Slice the zucchini, eggplant and carrot with a vegetable peeler into long thin slices. Cut the mushrooms and tomatoes into thin slices. Dress the pie dish with the puff pastry and prick the bottom with a fork. Now put the vegetable slices from the outside to the center around the dish, change colors in every tour, to make it nice and colorful. Put the slices with the skin side to the top, so you can see the colors. I also added a Mozzarella Cheese, cut into thin slices in-between, but you don’t need to do that if you don’t like. Now mix the ingredients for the custard together and pour onto the vegetables. Bake at 200 C in the oven for 40 minutes. Serve hot!
