Homemade Pizza Sauce ist eine dickliche Tomaten Sauce. Man kann sie gut als Grundlage zu anderen Saucen benützen, so etwa wie die Passata di Pomodoro. Der Unterschied zur Passata ist, dass die Sauce gewürzt ist. Passata ist normalerweise nur gesalzen, aber ohne andere Gewürze.
Es lohnt sich, die Sauce in groesseren Mengen herzustellen und dann in Portionen einzufrieren. Ich nehme sie für Pizzas, da sie eben etwas dicker ist, als normale Tomaten Sauce, aber sie ist auch super, um Pasta zu überbacken, oder als Sauce zu Fleischbaellchen.

Pizza Sauce is a slightly thicker sauce, than a normal tomato sauce. You can use this sauce as a base to lots of dishes, similar to the Passata di Pomodoro. The main difference is the seasoning. Passata is normally only salted but without other seasonings.
You should make big amounts of this sauce, as you can freeze it in portions and then just take it out of the freezer. I use it for Pizzas, as the sauce is a bit thicker, but it is also delicious for baked Pasta or as a sauce to meatballs.

Homemade Pizza Sauce

Fuer ca 3 gute Portionen Pizza Sauce:
1 kg reife Tomaten
1 kleine Zwiebel
3 Knoblauchzehen
2 EL Olivenoel
Salz und Pfeffer
Oregano
Rosmarin
3 EL Tomatenmark

Die Tomaten unten im Kreuz einschneiden und dann ca 10 Minuten in siedendes Wasser legen. Danach laesst sich die Haut sehr gut abloesen. Die geschaelten Tomaten klein schneiden
Die Zwiebel und Knoblauchzehen klein hacken und in einem tiefen Topf im heissen Olivenoel glasig braten. Tomaten dazu geben und 50 Minuten koecheln lassen.
Die Sauce wuerzen und das Tomatenmark zugeben und nochmals 10 Minuten koecheln lassen. Die Sauce mit dem Mixstab puerieren.

Tip:
– auf Pizza streichen
– zum Ueberbacken von Pasta verwenden
– als Grundlage fuer Fleischsaucen benuetzen
– als Sauce zu Fleischbaellchen benuetzen
– als Grundlage fuer Tomatensuppe benuetzen

For approx. 3 good Portions for Pizzas:
1 kg ripe Tomatoes
1 small Onion
3 cloves of Garlic
2 tbsp Olive Oil
Salt and Pepper
Oregano
Rosemary
3 tbsp Tomato Puree

Cut a cross into the bottom of the tomatoes and put them into boiling hot water for 10 minutes. After that the tomatoes can be peeled easily. Chop the tomatoes.
Chop the onion and garlic cloves, fry them in the hot olive oil. Use a deep heavy pan. Add the chopped tomatoes and let simmer for 50 minutes.
Now season the sauce and add the tomato paste. Let simmer for another 10 minutes. Then puree with your blender.

– use as a base to meat Sauces
– use as sauce to meatballs
– use as base for Tomato Soup
