This is again a very simple but really delicious recipe! Zucchini with cheese. I have seen a video, where cheese was wrapped into slices of zucchini to get these Zucchini-Cheese Parcels. I had to try it! Baby Bell is the perfect cheese for this recipe, as they have to right size. But you could use Raclette cheese or even the Mini Caprice. Choose your favorite!​

You can prepare this dish in advance, and it needs only four ingredients. As it is so simple, I used it at our birthday party!

Ingredients

  • 3 large Zucchini

  • 15 Baby Bell

  • Salt and Pepper

Instructions

Step 1

Slice the zucchini with a peeler into thin slices. You need two per parcel!

Step 2

Cut the Baby Bell into two discs of each approx 8 mm thickness.

Step 3

Wrap one half Baby Bell into one slice of Zucchini, turn 90 degrees, wrap into the second slice of zucchini.

Step 4

Bake in the oven at 180 C for approx 30 minutes.  The zucchini are not all the way cooked but really delicious. 

Notes

– Bake the parcels at 200 C for 30-40 minutes to have them served soft and all the way molten.
– sprinkle with grated cheese before baking.
– pour some tomato sauce over them and bake. 
– serve as finger-food with a dip.
