Ich mag Madeleines, ich mache sie hin und wieder. Natürlich versuche ich jedes mal andere zu machen, einmal ist es Schokolade, einmal Vanille und diesmal habe ich eine etwas unkonventionelle Art davon gemacht, ich habe Mandel-Vanilla Eiweiss-Madeleines mit Schokoguss gemacht, ähnlich den Macaroons und habe sie als Madeleine in der speziellen Form gebacken. Sie sind unglaublich luftig und schmecken hervorragend, sehen aber sehr fade aus, deshalb habe ich sie in Schokolade getunkt.

I love Madeleines, I like to make them from time to time. Of course, I try to make a different dough each time. One time it is chocolate, next time vanilla and this time I used egg-whites, and almond, similar to a macaroon dough. I baked them in the traditional Madeleine form, so they look nice. They are very airy and delicious, but they looked a bit bland, so I dipped them into chocolate.

Mandel-Vanilla Eiweiss-Madeleines mit Schokoguss

Fuer ca 18 Madeleines:
3 Eiweiss
225 g Puderzucker
1 gehäufter TL Stärkemehl
1 TL Vanilla Extract
350 g gemahlene Mandeln

Die Eiweisse steif schlagen, dann den mit dem Stärkemehl gemischten Puderzucker langsam dazu mischen. Die Mandeln und das Vanilla Extrakt darunter ziehen. Den Teig im Kühlschrank 1 Stunde kühl stellen.
Die Förmchen für die Madeleines einfetten und einfüllen. Im Ofen bei 180 C Grad 15 Minuten backen. Dann die Madeleines sorgfältig aus den Förmchen nehmen, wenden und nochmals 5-8 Minuten backen. Der Eiweissteig bleibt sonst unten fast ungekocht und wenn man sie länger einseitig backt, werden sie oben zu dunkel.
Die Madeleines auskühlen lassen, dann einen Beutel Schokoladenglasur schmelzen, die Madeleines darin eintunken und trocknen lassen.
In einer Dose kann man dieses Gebäck eine Woche halten.

For approx. 18 Madeleines:
3 Egg-white
225 g Icing Sugar
1 heaped tsp Cornstarch
1 tsp Vanilla Extract
350 g ground Almond

Beat the egg-whites until stiff, then slowly mix with the cornstarch and icing sugar. Fold the almond and vanilla extract into them. Let the dough rest in the fridge for 1 hour.
Grease the madeleine dishes and fill them with the dough. Bake in the oven at 180 C for 15 minutes, then take them carefully from the baking dish, turn them over and bake for another 5-8 minutes. You need to do that, or the dough will stick to the form and not be cooked fully. Let them cool down. Then heat up a bag of chocolate cover and cover part of the madeleines with it.
In a closed tin these madeleines can be kept for up to one week.
