Pan-fried Salmon with stir-fried Vegetables
Pane-Bistecca
I love salmon, and this pan-fried salmon with wok-fried vegetables dish is so easy to make! What could be better than protein from fish and fresh vegetables?
Did you know? Salmon are mentioned as early as Pliny the Elder. There were also many schools of salmon in European rivers. The Rhine in particular was considered a river with numerous salmon, and until the beginning of the 20th century, several hundred thousand wild salmon still swam through its waters. When industry settled on the banks in the 19th century, hydroelectric power plants blocked the rivers, and water quality deteriorated due to heavy pollution, the salmon gradually disappeared.
In Switzerland, salmon, which used to be abundant, disappeared from rivers in the 1960s. As a result of the successful reintroduction of salmon to the Rhine, salmon are also expected to return to Switzerland. In October 2008, a salmon was caught in Basel for the first time in Switzerland. In May 2012, a catch was reported in Rheinfelden. The path taken by the sighted salmon probably led through numerous locks, as there are still run-of-river power plants that prevent the migration of salmon. In June 2012, another specimen was sighted in Rheinfelden. (from Wikipedia)
Here is my simple recipe.

Here is my simple recipe.
Ingredients
2 Salmon Fillets
1 Onion, sliced
2 Garlic cloves, chopped
50 g Mushrooms
1 large Carrot
50 g Okra
1 Eggplant
1/2 Bunch Parsley, chopped
2 tbsp Pesto
1 tsp Sugar
Salt and Pepper
Paprika
Rosemary
Olive Oil
Instructions
1
Step 1
Cut the eggplant into thin strips, julienne the carrot, and slice the okra and mushrooms. (Or cut all the vegetables into equal-sized cubes.)
2
Step 2
Spread the pesto on the salmon.
3
Step 3
Heat some oil in a pan and fry the salmon skin-side down for 7 minutes, then turn and fry for another 7 minutes. The thicker the salmon, the longer the cooking time.
4
Step 4
Meanwhile, heat some oil in a wok and sauté the onion and garlic. Then add the eggplant and okra and fry for 5 minutes. Add the carrots and mushrooms and fry for another minute. Add the sugar and spices and fry for 5 minutes, stirring frequently. Mix in the parsley.
5
Step 5
Divide the vegetables between 2 plates and place the fish on top. If desired, serve with hollandaise sauce.
