
Gluten-free Almond-Chocolate Cookies

Fine gluten-free almond-chocolate cookies very quickly mixed together and so delicious. My daughter is coming to visit and so I bake in advance, and definitely gluten-free!
My daughter has coeliac disease, a gluten allergy. So, you have to be very careful what you cook and how you prepare it. At first, when she was diagnosed, I really didn’t know how to cook, as wheat is in almost everything. I panicked as soon as I had to cook. But it’s actually not that difficult if you stick to certain rules! I have made a Page with all the information!
These cookies are really great because they are so easy. The chocolate goes wonderfully with the almonds! I hope my daughter likes them!

Ingredients
For 22 Golf ball size Cookies
220 g Almond Flour
60 g brown Sugar
1 Pinch of Salt
1 tsp Baking Powder
1 tbsp Lemon Zest
2 Egg whites
1 tbsp Bitter Almond Aroma
100 g dark Chocolate Chips
Almond Slivers for Deco
Icing Sugar
Instructions

Step 1
Mix the dry ingredients, almond flour, sugar, salt, baking powder and lemon zest in a bowl together.

In another bowl, beat the egg whites with a pinch of salt until stiff.

Then fold the egg whites with the bitter almond flavoring into the dry ingredients and add the chocolate chips and mix.

Press golf ball sized balls together from this mixture, I used an ice cream scoop, and place on a baking tray lined with baking paper.

Then cover all the balls with a few almond flakes and bake in the oven at 160 C degrees for 20-25 minutes. Depending on your oven, you may need less time.

Leave the cookies to cool and sprinkle with powdered sugar.
Notes
They will keep in a tin, well-sealed, for about 1-2 weeks. (I’m sure mine won’t last that long when my Cookie Monster arrives!)
