Tomato and mandarin salad with mango dressing and burratina; a wonderfully tasty salad!!!
A fruity dressing of mango, oranges and limes, with fine tomatoes and tangerine slices is the perfect highlight on any festive table! I served it to my friends for Christmas lunch and got lots of compliments!

Ingredients
Salad:
600 g small Roma Tomatoes quartered
4 Mandarins, peeled
¼ Bunch Parsley, chopped
3 Burratine (small Burrata cheese)
1 ripe Mango
2 Limes, the juice
2 Oranges, the juice
2 tsp Honey
1 Garlic cloves
½ tsp Salt
some Pepper
50 g Olive Oil
½ tsp Chili Powder
4 Spring Onion, chopped
2 tbsp Apple Cider Vinegar
Dressing:

Step 1
Arrange the tomatoes on a large plate in a ring.

Arrange the mandarin slices around it. Sprinkle with the chopped parsley.

Puree the ingredients for the dressing either in the TM6 or in a blender jar.

Step 4
Place the burratine in the middle of the wreath and pour the dressing over the salad. Serve cold.
