Okonomiyaki – Japanese Meat and Vegetable Omelett

Okonomiyaki can be found almost everywhere in Japan. We also had them on our trip near Kyōto. One can change the filling to suit your taste or even use leftovers from the fridge. You also need Japanese mayonnaise and okonomiyaki sauce, which are very easy to make. You don’t have to buy them.

Okonomiyaki can be translated as follows: Okonomi means “taste”, “to your liking”, meaning “what you want”. Yaki means “fried” or “grilled”. The vegetables and often meat or fish are mixed into a batter and then fried on a hot griddle (teppan) at the table. It resembles a pancake, but is often called Japanese pizza, although it bears no resemblance to pizza at all. This is probably because leftovers can also be used in it. Okonomiyaki is a specialty in the Kansai region, especially in Osaka and Hiroshima. In Tokyo, there is a similar dish called monjayaki.

The Kansai version is baked on both sides and turned over on the teppan with spatulas and cut into pieces. The pieces are decorated with nori, katsuobushi/bonito, mayonnaise or ginger. Darker vegetables are usually used in Kyōto.

Ingredients

For the dough:

  • 160 g Flour

  • 120 ml Water

  • 1 Pinch of Salt

  • 2 Eggs

  • Filling:

  • 100 g Pork Belly, cut into thin slices

  • 1 small Eggplant, julienne cut

  • 10 Beans, julienne cut

  • 1 Carrot, julienne cut

  • 20 cm long Celery stalk, julienne cut

  • 1 handful of Bean Sprouts

  • A handful of Mushrooms, finely chopped

  • 2 tbsp Oil

  • Mayonnaise:

  • 4 tbsp Mayonnaise

  • 2 tbsp Worcestershire Sauce

  • Okonomiyaki Sauce:

  • 2 tbsp Soy Sauce

  • 1 tbsp Ketchup

  • 1 tbsp Worcestershire Sauce

  • Dekoration:

  • chopped Nori Leaves

  • Pickled Ginger

Step 1

(julienne is the technical term for a method of cutting vegetables used in cooking, in which the vegetables are cut into matchstick-like square sticks (1.5-3 mm wide, 3-5 cm long))

Fry the meat well in a little oil, then put to one side and leave to cool.

In a large bowl, mix the ingredients for the batter. Put to one side. Now cut up all the vegetables and add to the batter. Add the meat and mix well.

Heat the oil in a shallow pan, then place three pancake-sized mounds of the mixture in the pan, shape into rounds and fry well. Then turn each one with a spatula and fry this side of the cake well browned too.

Notes

Serve on plates and drizzle with both sauces, usually in strips, then sprinkle with pieces of nori and ginger or bonito and serve.
