Quibebe – Brazilian Pumpkin Stew

This simple and delicate pumpkin dish from Brazil is gluten-free, lactose-free and vegan. Currently, when many are plagued by allergies, this is important! This dish is cooked quickly and tastes great!

Ingredients

  • 800 g Pumpkin cut into cubes

  • 1 Onion chopped

  • 1 tsp grated Ginger

  • 1 tsp Sriracha

  • 1 tbsp brown Sugar

  • Juice and zest of 1 Lime

  • Salt and Pepper

  • 400 ml Coconut Milk

  • Some Oil

Instructions

Step 1

In a pot, sauté the onion in the oil, then add the coconut milk, ginger, sriracha and brown sugar. Mix everything well.

Add the pumpkin cubes and simmer, covered, for about 15 minutes.

Step 3

Then add the lime juice and zest and serve with white rice.
