Thai Style Corn Fritters – Gluten-free, a delight!

We love corn very much it does not matter how it is cooked. As Polenta, in a Salad, on the cob, als as bread roll or mixed in. Of course, you can serve them also as a Patty however I made mine this time Thai style.

To make them gluten-free I did not add flour, I added Chia seeds; they swell up and get pasty. These patties get wonderfully crisp and delicious!

Ingredients

  • 300 g Kernel Corn from the can, drained

  • 1 tbsp Chia Seeds

  • 4 tbsp Water

  • 1 tbsp yellow Thai Curry Paste

  • 1 tsp Baking Powder

  • ½ tsp Salt

  • Pepper to taste

  • 120 g Rice Flour

Instructions

Step 1

Soak the Chia seeds in the water for 20 minutes until you get a thick paste.

Step 2

Put half of the kernel corns with the chia seeds and all other ingredients into the blender and puree. Mix this paste with the rest of the kernel corns.

Step 3

Fry tbsp size batches in hot oil on both sides. I pushed them down to flatten.

Notes

Serve them with sweet chili sauce or soy sauce.
