Thai Style Corn Fritters – Gluten-free, a delight!
We love corn very much it does not matter how it is cooked. As Polenta, in a Salad>, on the cob, als as bread roll or mixed in. Of course, you can serve them also as a Patty however I made mine this time Thai style.
To make them gluten-free I did not add flour, I added Chia seeds; they swell up and get pasty. These patties get wonderfully crisp and delicious!

Ingredients
300 g Kernel Corn from the can, drained
1 tbsp Chia Seeds
4 tbsp Water
1 tbsp yellow Thai Curry Paste
1 tsp Baking Powder
½ tsp Salt
Pepper to taste
120 g Rice Flour
Instructions

Step 1
Soak the Chia seeds in the water for 20 minutes until you get a thick paste.

Step 2
Put half of the kernel corns with the chia seeds and all other ingredients into the blender and puree. Mix this paste with the rest of the kernel corns.

Fry tbsp size batches in hot oil on both sides. I pushed them down to flatten.
