Spinat und Frischkäse Gipfeli – Spinach and Cream Cheese Croissants

In der Schweiz sind Schinken Gipfeli etwas, was man überall kriegt, sogar gefroren zum Aufbacken. Wir lieben sie sehr, denn sie sind schnell gemacht und passen immer. Aber nicht jeder isst Fleisch und wir haben Freunde, die kein Schweinefleisch essen, so habe ich diese Spinat und Frischkäse Gipfeli gemacht und die schmecken echt toll! Sie sind auch ganz einfach und können als Fingerfood zum Apero oder als Snack serviert werden.

In Switzerland Ham Croissant are well known and served everywhere. You can actually buy them frozen to bake them up. We love them and they fit all the time. Serve them to drinks as a finger-food or a snack in between. But not everyone likes meat, or some of our friends do not eat pork. That’s why I made these spinach Croissants. They are delicious and so easy to make!

Spinat und Frischkäse Gipfeli

Fuer 18 Stück:
250 g Blätterteig, zu einem Rechteck ausgewallt
500 g Spinat
200 g Frischkäse
2 Knoblauchzehen, gehackt
Salz und Pfeffer
1 Ei
Etwas Oel

Etwas Oel in einer flachen Pfanne erhitzen und den Knoblauch und Spinat darin braten, bis der Spinat zusammen gefallen ist. Mit Salz und Pfeffer würzen. In einem Sieb auskühlen lassen und dann die restliche Flüssigkeit gut ausdrücken. Den Spinat mit dem Frischkäse gut vermischen. Im Kühlschrank lagern. Den ausgewallten Blätterteig in lange Dreiecke schneiden (siehe Bild) und auf jedes Dreieck auf der weiten Seite eine Kugel der Spinat-Frischkäse Füllung geben. Von der weiten Seite her aufrollen und mit der Spitze des Dreiecks nach unten auf einen mit Backpapier belegten Backblech auslegen. Mit verschlagenem Ei bestreichen und im Ofen bei 200 C Grad 15-20 Minuten backen. Sie können warm oder kalt serviert werden.

For 18 Pieces:
250 g Puff Pastry rolled out to a rectangle
500 g fresh spinach
200 g Cream Cheese
2 cloves of Garlic, chopped
Salt and Pepper
1 Egg
Little Oil

Fry the garlic and spinach in very little oil, season it and cook until it falls apart. Cool down! Then squeeze the liquid out! Keep it in the fridge until further use. Then mix it with the cream cheese. Cut the rolled out puff pastry in triangles (see pictures) and put 1 teaspoon of the filling onto the wide part, roll up from that side. Put them onto a baking tray with the tip of the triangle down and brush them with some beaten egg. Bake in the oven at 200 C for 15-20 minutes, depending on the size. Can be eaten warm or cold!
