Wir mögen Mozzarella sehr und ich serviere ihn gerne auf alle verschiedenen Arten. Als Carpaccio, im Salat, oder klassisch als Insalata Caprese, auf der Pizza, in Spaghetti, auf Blätterteig, auf Wähen, es gibt unzählige Möglichkeiten, das der Käse sehr mild ist und sich an jedes Gericht anpasst! Und genau das habe ich mir gesagt, als ich diesen Mozzarella mit Kräutern und Oliven machen wollte. Man kann ihn nämlich ganz toll marinieren und würzen! Deshalb habe ich hier eine Kräuter und Oliven Würze gemacht, die auf dem Mozzarella nicht nur toll aussieht, sondern auch so schmeckt.

We love Mozzarella very much and I use it in all kinds of dishes. As Carpaccio, in Salads, or classic as Insalata Caprese, on Pizza, in Spaghetti, on Puff Pastry, on Pies, there are uncountable possibilities. As the cheese is very mild, it fits to everything, because it takes on the taste of whatever you serve it with. And that’s what I did with this dish! You can marinate the mozzarella wonderfully and serve it as starter. That’s what I did, I made a marinade with herbs and olives. It looks great and it tastes devine!

Mozzarella mit Kräutern und Oliven

Für 4 Personen als Vorspeise:
3 Mozzarella Kugeln
12 schwarze, entsteinte Oliven
1 Bund glatte Petersilie
3 Frühlingszwiebeln
1 rote Chilischote
Salz und Pfeffer
1 Zitrone, Abrieb und Saft
Ca 5 EL Olivenöl
1 Handvoll geröstete Pinienkerne

Die Mozzarella Kugeln in Würfel schneiden und auf eine Platte verteilen. Ich habe so eine kleine Hackmaschine, die habe ich mit den Oliven, der Petersilie und den Frühlingszwiebeln gefüllt und benützt. Wer das nicht hat, muss einfach alles von Hand fein hacken. Die Chilischote aufschneiden, eventuell die Kerne entfernen, je nachdem wie scharf man es möchte und kleinhacken. Dies alles mit dem Zitronenabrieb, dem Zitronensaft und dem Olivenöl mischen und mit Salz und Pfeffer würzen. Unterdessen die Pinienkerne ohne Oel in einer flachen Pfanne rösten. Die Kräuter-Olivenmischung über den Mozzarella geben und die gerösteten Pinienkerne darüber verteilen. Sofort servieren!

For 4 Persons as starter:
3 Mozzarella Cheese Balls
12 black Olives, stone removed
1 Bunch flat Parsley
3 Spring-onion
1 red Chili
Salt and Pepper
1 Lemon, Zest and Juice
Approx. 5 tbsp Olive Oil
1 handful roasted Pine Nuts

Dice the Mozzarella and put onto a plate. I have a small very handy chopper, so I added the olives, parsley, and spring-onion to it and chopped them If you do not have this wonderful little machine chop it all by hand. Open the chili and remove the seeds, if you do not want the herbs to be too spicy. Chop the chili up. Now mix this all with the lemon juice, lemon zest and olive oil. Meanwhile roast the pine nuts in a fat free pan. Season the herb mixture with salt and pepper and pour over the mozzarella. Serve immediately.
