Aprikosen-Schnitten – Apricot Slices

Die Aprikosen sind in der Schweiz gerade so wunderbar reif. Wie herrlich, dass man hier reife Aprikosen kriegt, die auch nach Aprikosen schmecken! Bei uns in Asien kommen sie oft unreif an, werden per Stueck verkauft (teuer, teuer…) und schmecken mehlig. Doch hier in Europa sind sie herrlich saftig und suess, das liebe ich an ihnen. Deshalb gabs auch gestern Aprikosen-Schnitten, feine Aprikosen auf einem Mandelkuchen.

In Switzerland, at this time of year, the apricots are wonderful ripe. It’s a big difference between the apricots here and the apricots we get in Asia. There they arrive unripe, are sold by piece (awfully expensive) and taste of nothing. Here they are sweet and juicy, simply perfect! That’s why I made these apricot slices, fine juicy apricots on an almond cake. 

Fuer ein Backblech, es ergibt ca 15 Schnitten:
250 g weiche Butter
190 g Zucker
6 Eier
200 ml Amaretto
150 ml Sahne
250 g Weissmehl
250 g gemahlene Mandeln
1 gehaeufter TL Backpulver
1 Prise Salz

Belag:
1.2 kg Aprikosen
4 EL Aprikosenkonfituere

Die Butter mit dem Zucker schaumig ruehren. Nun nach und nach die Eier zugeben und mitruehren. Die Fluessigkeiten dazu geben und mit dem Schwingbesen der Kuechenmaschine cremig schlagen. Die Prise Salz dazu geben. Das Mehl und das Backpulver vermischen und mit den Mandeln unter die Masse ziehen. Ein Backblech einfetten und den Teig darauf giessen, glattstreichen und im Vorgeheitzten Ofen auf 180 C Grad 15 Minuten backen.
Die Aprikosen unterdessen halbieren und den Stein entfernen. Dann satt auf den vorgebackenen Boden legen. Nochmals im Ofen bei 180 C Grad 30-40 Minuten fertig backen. Die Konfituere erwaermen und dann mit einem Pinsel auf den Kuchen streichen. Den Kuchen ganz abkuehlen lassen und in Schnitten schneiden.

For a Baking Tray, approx. 15 Slices:
250 g soft Butter
190 g Sugar
6 Eggs
200 ml Amaretto
150 ml Whipping Cream
250 g Flour
250 g ground Almonds
1 heaped tsp Backing Powder
1 Pinch of Salt

Topping:
1.2 kg Apricots
4 tbsp Apricot Jam 

Mix the butter with the sugar. Now add one egg after the other and mix well. 
Add the liquids and whisk in the kitchen machine until creamy. Add the pinch of salt. Mix the flour with the baking powder and add them with the ground almonds to the liquid. Grease a baking tray and pour the dough onto it, flatten with a spatula. Bake in the preheated oven at 180 C for 15 minutes. 
Meanwhile half the apricots and remove the stone. Put them onto the half-baked dough and bake for another 30-40 minutes at 180 C. Heat the jam and brush the fruits with it. Let the cake cool, then cut it into slices and serve.
