Schweinsleberchen – Pork Liver

1 Mins read

Fuer einige ein No-Go, fuer andere eine Delikatesse! Innereien!

For some a no-go, for others a delicacy! Entrails! I am not a big fan of entrails, but when it comes to liver I make an exception! I love calf’s liver with roesti, a typical Swiss dish! But as I cannot get calf’s liver in Asia, I have to use pork liver. It tastes good too! I love them slightly sour and with a bit of sauce… just divine!

Fuer 2 Personen:
500 g Schweineleber
1 rote Zwiebel
1 Prise Zucker
20 g Butter

For 2 Persons:
500 g Pork Liver
1 red Onion
1 Pinch of Sugar
20 g Butter
Salt and Pepper
2 tbsp Cider Vinegar

Slice the liver thinly into smaller pieces. Half the onion and cut thin slices. Melt the butter in a flat pan and fry the onion with the pinch of sugar until soft. Add the liver, season well and fry until done, then add the vinegar. Let reduce and serve immediately! Best served with Roesti or mashed potatoes!
