Salat im Tacokoerbchen – Salad in a Taco Basket

2 Mins read

A fresh salad, served in a shell, binds the freshness with the crunchiness of the taco. I like it, when food cracks under my teeth!
We are just back from our stay in Europe and for dinner in this tropical heat I made a salad and served it in a taco shell. I had bought those shells in the Philippines, but you can easily make them yourself. Just take a corn tortilla and put it over an upside-down cup and bake it in the oven.

Fuer 2 Personen:
1 handvoll Romain Salat, kleingeschnitten
1 Tomate
1 gekochtes Ei
1 Aubergine

For 2 Persons:
1 handful Romaine Salad, chopped
1 Tomato
1 cooked Egg
1 Eggplant
2 Taco Shells (or put corn tortillas over a cup and bake in the oven for approx. 10 minutes)
3-4 tbsp Corn
1 tbsp Sunflower seeds
1 crushed Taco

Vinaigrette:
1 tbsp Red Wine Vinegar
4 tbsp Olive Oil
2 tbsp cold Water
1 tbsp Chives, chopped
Salt and Pepper

Chop the tomato. Chop the cooked egg. Slice the eggplant and fry the slices in hot oil. Put the taco shells onto plates and add the chopped romaine salad. Then add the chopped tomato, egg, corn and eggplants. Put the ingredients for the vinaigrette into a jar or a shaker and shake well. Pour the vinaigrette over the salad. Sprinkle with sunflower seeds and the crushed taco and serve.
