Man spricht vom 14.

Grissini are bread-sticks from Torino/Italy. They say, they have been created in the 14th century, but legend also says, they are from a baker named Antonio Brunero, who in 1675 invented them for Vittorio Amedeo II. von Savoyen, who had in-digestive distress. Since the 18th century they are being made by machine, but mine are handmade. I used some sesame and chia seeds to decorate them.

120 g Weissmehl
180 g Vollkornmehl
40 g Pastamehl (Semolinastaub)
1 Beutel Trockenhefe
250 ml warmes Wasser
5 El Olivenoel
1 Tl Salz
etwas Rosmarin
etwas Sesam
etwas Chia Samen

120 g Bread Flour
180 g Wholemeal Flour
40 g Pasta Flour (Semolina)
1 bag Dried Yeast
250 ml warm Water
5 tbsp Olive Oil
1 tsp Salt
some Rosemary
some Sesame Seeds
some Chia Seeds

Soak the dried yeast in the warm water for 10 minutes. Then add all the other ingredients except the sesame and chia seeds. Knead well together, then let rest in a warm place for 1 hour.
Knead the dough again, then roll it out into a flat shape approx. 1 cm thick. I cut 1 cm stripes with the ravioli wheel and folded each one together and twisted it, then turned it over in either sesame or chia seeds. Put them on a baking tray and bake at 200 C for 15-20 minutes.

Grissini fit very well to all kinds of Antipasti, to cold cuts or just like that as a snack. Try them wrapped with some dried ham or pancetta or dip them in melted cheese.
