Hollaender Torte

2 Mins read

This cake is one of my favorites; it keeps fresh for several day… if the cake lasts that long. As a little girl I preferred this cake. My sister loved everything chocolate, but I love almonds much more! On special occasions we could get a small piece from the bakery. My mother never baked this cake, she as an Italian preferred crostata.
After checking several recipes of this traditional cake, I ended up with a concoction of all.

Hollaender Torte

Fuer den Teig:
300 g Mehl
125 g weiche Butter
75 g Zucker
1 Ei
1 Prise Salz

1/2 Glas Aprikosenmarmelade darauf verstreichen.

Die Fuellung:
120 g weiche Butter
100 g Zucker
150 g gemahlene Mandeln
4 Tropfen Mandelaroma
3 Eier
1 gestrichenen EL Mehl

For the dough:
300 g Flour
125 g soft Butter
75 g Sugar
1 Egg
1 Pinch of Salt
2 tbsp Milk
grated skin of one Lemon

Quickly make a dough with these ingredients and let rest in fridge for 30 minutes. Put 2/3 of the dough into a greased pie form and pull up on the sides. the rest of the dough will be needed later, store in the fridge.

Brush with 1/2 glass of apricot jam.

For the filling:
120 g soft Butter
100 g Sugar
150 g grated Almond
4 drops of Almond essence
3 Eggs
1 tbsp Flour
grated skin of one Lemon

Mix everything together and pour onto the jam. Roll out the rest of the dough and cut stripes. Decorate the cake with them. Bake at 180 C for 45 minutes. Let cool the cake and sprinkle with icing sugar. The cake is even better on the second day!
