Pilz Frittata – Mushroom Frittata

1 Mins read

Again a quick Italian recipe, made with fresh vegetables or like me, with fresh mushrooms.
A Frittata is a mix between omelet and scrambled eggs, or even a crust-less quiche. I love Frittatas; you can be really creative with them.

Pilz Frittata

Fuer 2 Personen:
4 Eier
1 Bund Petersilie

For 2 Persons:
4 Eggs
1 Bunch Parsley
150 g mixed Mushrooms (I used button mushrooms and oyster mushrooms)
Salt and Pepper
Paprika
Rosemary
some Olive Oil

Beat the eggs with the seasoning, then add the chopped parsley. Clean the mushrooms and cut them into slices, add them to the egg mixture. Heat some olive oil in a wide frying pan and add the mixture. Cover it, turn the heat down and let fry for 7-9 minutes. (I use to shake the pan lightly from time to time so to not make the frittata stick) Turn the frittata with the help of a plate over, slip it back into the pan and fry uncovered for another 3-5 minutes. Serve hot!

Tip:
You can cut the cold frittata into small cubes or slices and serve them like finger-food!
