Nutella Mini Muffins – Kung Hei Fat Choi!

These small, quick mini muffins are super delicious. Just right for Chinese New Year, where you like to have something sweet at home when visitors arrive. For all Nutella lovers they are a MUST! But you can also fill them with jam, which also tastes wonderful. As many of you know, I’m not a big chocolate fan, but with apricot jam I can not resist!

So, who wants to conjure up something sweet quickly, with a surprising inside, this is exactly RIGHT! Kung Hei Fat Choi – Happy New Year of the rabbit!

Ingredients

For about 24 Mini Muffins (or 12 regular sized)::

  • 300 g Flour

  • 2 heaped tsp Baking Powder

  • 1 tsp Cinnamon

  • 1 Pinch of Salt

  • 120 g brown Sugar

  • 2 Eggs

  • 80 ml Sunflower Oil

  • 2 tsp Vanilla Extract

  • 180 ml Milk

Instructions

Step 1

Beat the ingredients together well until a soft dough forms.

Step 2

Spray 24 mini muffin cups with oil spray and put a tablespoon of the batter in each. Now add a teaspoon of Nutella (or your choice of jam) to each and cover with the rest of the muffin batter. Tap briefly on the work surface so that the dough levels out.

Step 3

Bake in the oven at 180 C degrees for about 25 minutes.

Notes

You can decorate the muffins with chocolate sprinkles, to do this you must first coat them with warmed apricot jam so that the sprinkles stick. 
You can also add raspberries or blueberries to these muffins!
