
Orange Squares

These orange squares take a little time to make, but they are wonderfully crumbly and delicious!
The dough is quick to put together but needs to rest because it contains a lot of butter. It is also suitable for other cookies because it is wonderfully crumbly. The filling can be changed to suit your taste, e.g., use lemon instead of orange, bitter almond, or vanilla, but I would then replace the orange jam with apricot or strawberry, and with lemon curd for lemon.
As you can see, one dough, one filling, and many different cookies!

Ingredients
Dough:
100 g Sugar
250 g Flour
125 cold Butter diced
2 Egg yolks
1 Egg
Zest of 1 Orange
150 g ground Almond
80 g Sugar
1 Egg white
Juice of 1 Orange
Zest of 1 Orange
Orange Marmelade
½ Egg white
2 tbsp Orange Juice
approx. 70 g Icing Sugar
Zest of ½ Orange

Step 1
For the dough, quickly knead all the ingredients together, then wrap in cling film and leave to rest in the refrigerator for 30 minutes.

Meanwhile, for the filling, mix the almonds with the egg white, sugar, orange juice, and orange zest.

After resting, halve the dough and roll out each half thinly into a rectangle on baking paper.

Spread orange marmalade on one of the rectangles, then spread the filling on top.

Place the second piece of dough on top and press down lightly.

Bake in the oven at 180°C for 15-20 minutes.

For the glaze, beat the egg white until stiff, then beat in the sugar and mix in the orange juice.

Spread the glaze over the slightly warm dough and sprinkle with the zest of ½ orange. Leave to cool completely, then cut into squares.
