Wie schon oft erwähnt, werfe ich ungern Esswaren weg. So geht es mir auch mit Eiweiss. Klar, man kann es einfrieren, aber genau so schnell kann man daraus kleine Plätzchen backen. Das habe ich hier gemacht und einfach ein paar Dinge zusammen geworfen. Heraus kamen kleine Leckerbissen, diese Schnell gemachte Mandel Häufchen! Und sie sind Glutenfrei!!

As I have mentioned several times, I do not like to throw food away! That even goes for egg-white! Of course, you can freeze them, but they are also quickly made into a cookie. I did that, I just used few ingredients and I ended up with these small delights! And they are gluten-free!

Schnell gemachte Mandel Häufchen

Fuer ca. 50 Stück:
1 Eiweiss
80 g Zucker
1 Prise Salz
4 TL Vanille Zucker
1 Gläschen Bittermandel Extrakt
100 g Mandelmehl

Das Eiweiss mit der Prise Salz steif schlagen, dann den Zucker und Vanille Zucker während des Schlagens einrieseln lassen, bis die Masse glänzt. Die Mandeln mit dem Bittermandel Extrakt unterheben. Die Masse in einen Spritzbeutel geben und kleine Häufchen auf ein Backpapier spritzen. Im Ofen bei 150 C Grad ca. 25-30 Minuten backen.

For approx. 50 Pieces:
1 Egg-white
80 g Sugar
1 Pinch of Salt
4 tsp Vanilla Sugar
1 tsp Bitter Almond extract
100 g Almond Flour

Beat the egg-white with the pinch of salt until stiff. Slowly add the sugar and vanilla sugar while beating until the mass is shiny. Carefully fold in the almond flour and bitter almond extract. Fill into a piping bag and pipe small heaps onto a baking paper. Bake in the oven at 150 C for 25-30 minutes.
