Chinesische Mandel Plätzchen – Chinese Almond Cookies

Es gibt wenige chinesische Desserts, die den Europäischen ähnlich sind. Viele Desserts sind in Form von kalten Suppen, meist sehr, sehr süss, oder einfach nicht dem Geschmack der Europäer passend. Dazu gehören die Moon-Cakes, mit dem Ei im Innern, oder die rote-Bohnen-Suppe, oder die Schwarze Sesam Dumplings, oder gar die glutinous Reis Dumplings. Es gibt aber auch ganz fantastische chinesische Desserts, wie Mango Pudding oder Sago Suppe, Banana Fritters oder die chinesischen Eierkugeln. Dieses ist ein traditionelles Chinesische Mandel Plätzchen, ein Mürbeteig Rezept, das allen mundet.

There are many Chinese desserts which are not really to the taste of non-Chinese. They are often very sweet or made with ingredients we don’t use for dessert. Some of those desserts are red-bean soup, black sesame dumplings, Mooncakes, or glutinous rice dumplings. But there are also some really nice desserts like mango pudding, sago soup, banana fritters or egg balls waffles. This recipe is a nice almond cookie to everybody’s taste. 

Chinesische Mandel Plätzchen

250 g Mehl
1 TL Backpulver
1 Prise Salz
120 g Butter
90 g Zucker
1 Ei
1 Fläschchen Bittermandel Aroma
ca. 20 ganze Mandeln, geschält
1 Eigelb, geschlagen

Mische das Mehl mit dem Backpulver und dem Salz. Die Butter mit dem Zucker schaumig schlagen, dann das Ei und Bittermandel Aroma zugeben. Das Mehlgemisch zugeben und schnell zusammen mischen. Eine Rolle formen und in Klarsichtfolie verpackt mindestens 1 Stunde im Kühlschrank ruhen lassen. 
Nach dem Ruhen die Rolle in ca. 20 gleichgrosse Stücke schneiden. Diese Stücke einzeln in den Handflächen zu Kugeln rollen, mit einer Mandel bestücken und mit geschlagenem Eigelb bestreichen. Im Ofen bei 160 C ca 20 Minuten backen. Sie können in einer luftdichten Dose über mehrere Wochen gelagert werden.

250 g Flour
1 tsp Baking Powder
1 Pinch of Salt
120 g Butter
90 g Sugar
1 Egg
1 tbsp Almond Extract
approx. 20 Almonds, peeled
1 Egg-yolk, beaten

Mix the flour with baking powder and salt. In a bowl beat butter and sugar until creamy, then add egg and almond extract. Add the flour mix and knead quickly together. Form a roll and put into cling-foil. Refrigerate for 1 hour. Then cut the roll into approx. 20 pieces and roll each piece into a ball. Top each with one almond and brush with the egg-yolk. Bake at 160 C for 20 minutes. You can keep the cookies for a few weeks in an airtight box.
