Kokos-Mandel Traeumli – Cocos-Almond Dream Cookies

1 Mins read

I still had some egg-white to use up and wanted to bake with them. They would be perfect for Macaroons, or Merengue, but I wanted to do something new. Amaretti, but again, I did not have enough almond flour at home. So, I needed to use what I had at home, coconut. These cookies are simple and delicious! Crispy outside and chewy inside and of course gluten-free!

Fuer ca 20-25 Cookies:
100 g gemahlene Mandeln
100 g geraspelte Kokosnuss
180 g Zucker
1 Prise Salz
70 g Eiweiss
½ TL Zitronensaft
1 TL Mandelextrakt
Puderzucker

For approx. 20-25 Cookies:
100 g ground Almonds
100 g desiccated Coconut
180 g Sugar
1 Pinch Salt
70 g Egg-white
½ tsp Lemon Juice
1 tsp Almond Extract
Icing Sugar

First pre-heat a baking tray, lined with baking paper in the oven at 140 C. By heating the tray, the cookies will keep their shape and do not spread.

Mix the almonds with the coconut, sugar, and the pinch of salt. Beat the egg-white with the lemon juice until stiff. Then add the almond extract. Mix the dry and the wet ingredients together and knead to a crumbly dough. Then form little balls with this mass, roll them in the icing sugar and put them onto the heated baking tray. Bake in the oven for 25-30 minutes.
