Im Sommer reifen die Zucchini im Garten, meist hat man dann gleich ganz viele davon und weiss nicht, was damit tun. Genau dann versucht man moeglichst viele verschiedene Rezepte zu finden, bei denen man die Zucchini auch verwenden kann. Diese Blaetterteig-Zucchini Rolle ist so simpel einfach und schmeckt wunderbar. Man kann sie warm oder kalt essen, also kann man sie auch gut auf ein Picknick mitnehmen.

In summer the zucchini are ripe in the garden. Most times you get so many and you need to use them. That’s when you try to find as many different recipes for them as possible. You don’t want to throw away your own grown vegetables. These puff pastry-zucchini rolls are very easy and taste wonderful. You can eat them warm or cold, so you can take them easily to a pick-nick. 

Fuer eine Rolle von ca 12 Stuecken:
1 ausgewallter Blaetterteig von ca 25×40 cm
100 g Frischkaese
ein paar frische Kraeter nach Wunsch, zB. Petersilie und Basilikum, oder Fruehlingszwiebeln
1-2 Zucchini
Salz und Pfeffer
Paprika
1 Eigelb

Den ausgewallten Blaetterteig mit dem Frischkaese bestreichen.
Die Zucchini mit einem Spahrschaehler in duenne Scheiben schneiden. Diese nun auf dem Teig verteilen. Die Kraeuter hacken und darueber streuen und alles wuerzen. Den Teig von der langen Seite her aufrollen und leicht zusammen druecken.
Nun von einer Seite her alle ca 2-3 cm einen Einschnitt von ca 2/3 der Rollendicke machen. Nun jedes zweite Teil nach hinten klappen, so dass die Rolleninnenteile sichtbar sind. Mit dem Eigelb bestreichen und im Ofen bei 200 C Grad ca 30-40 Minuten backen.
​Die Zucchinirolle kann warm oder kalt serviert werden.

For a Roll of approx 12 pieces:
1 ready rolled out Puff Pastry of approx. 25×40 cm
100 g Cream Cheese
a few Herbs to taste, like Parsley and Basil, or Spring-onion
1-2 Zucchini
Salt and Pepper
Paprika
1 Egg-yolk

Spread the cream cheese onto the puff pastry. 
With a peeler cut thin slices from the zucchini. spread them onto the pastry. Chop some herbs and sprinkle them onto the zucchini. Season it well. Now roll up the pastry from the long side and push it slightly together. 
Make 2/3 cuts all along the roll approx 2-3 cm apart, then fold every second part over, so you can see the inside of the roll. 
Brush the roll with the egg-yolk. Bake in the oven at 200 C for 30-40 minutes. 
You can eat the roll warm or cold.
