Feigen-Gugelhopf – Gugelhupf with Figs

2 Mins read

For a BBQ at a friends place I baked a Gugelhupf. As I just had found some figs in the supermarket, I used them too. My friend was so happy, she said, this is the best Gugelhupf she had ever had. Almost nothing was left. And the good thing? She is looking for her friends to join her in a Gugelhupf baking class at my house.

Feigen-Gugelhopf

200 g getrocknete Feigen
200 g Sultaninen

120 g dried figs
120 g Sultanas
3 tbsp Cognac

Cut the figs into the same size as the sultanas and mix them all with the 3 tbsp cognac, let marinate for 30 minutes.

250 g soft Butter
280 g Sugar
350 g Flour
20 ml Milk
4 Egg-yolk
4 Egg-whites
1 Pinch of Salt
2 tsp Vanilla Sugar
2 tsp Baking Powder
Icing Sugar

Beat the soft butter with the sugar until foamy. Add the vanilla sugar. Then add the egg-yolks and mix well. Mix the flour with the baking powder and add it. Pour in the milk, but only as much as you need to make the dough soft, it should not be liquid.
Beat the Egg-whites with the pinch of salt and fold that with the marinated figs and sultanas carefully in.
Pour the dough into a well-greased Gugelhupf dish and bake in the oven at 170 C for 45-50 minutes.
Let the cake cool, then sprinkle with icing sugar.
