Laugen Broetchen – Laugen Bread Rolls

Eigentlich hatte ich sie Soehnchen schon lange versprochen und heute hatte ich endlich Zeit dazu.
Die Laugen Broetchen gehoeren mit zu den Lieblingsbroetchen in unserer Familie, aber leider kann man sie hier schlecht kaufen. Deshalb mache ich sie selber.
Viele scheuen davor zurueck, aber eigentlich ist es ganz einfach. Ich backe sie nun oefters, aber bis zum ersten Mal hats auch ewig gedauert.

Actually, I had promised my son to make Laugen bread rolls for a long time, and finally I had the time for it.
The Laugen bread rolls count to the favorite breads in our family, but it’s hard to find them in Asia. That’s why I made them myself.
Many shy away from it, but it’s actually quite easy once you tried them. I bake them now more often, but it took some time until I dared to bake them.

Laugen Broetchen

Fuer 8-10 Broetchen:
350 g Weisses Brotmehl 550
150 g Dinkelmehl
20 g Butter, fluessig
7 g Trockenhefe
15 g Salz
1 EL Honig
275 g warmes Wasser

Aus diesen Zutaten einen Brotteig mischen und kneten, 20 Minuten zugedeckt gehen lassen.
Den Teig nochmals kurz durchkneten, dann in 8-10 Stuecke schneiden. Broetchen, Bretzeln oder Stangen formen und nochmals zugedeckt 10 Minuten gehen lassen.
Unterdessen die Lauge aufkochen. Da es bei uns keine Kaiserlauge gibt, habe ich 1,5 Liter Wasser mit 2 gehaeuften Essloeffeln Baking Soda aufgekocht.
Die geformten Broetchen werden in die leicht koechelnde Lauge gelegt und ca 30 Sekunden getaucht. Ich nehme sie mit dem gelochten Kochloeffel raus, denn die richtige Lauge kann an den Fingern brennen. Am Besten zieht man Handschuhe an.
Die Broetchen nun auf das Backblech legen und einschneiden. Eventuell grobes Salz darauf streuen, ganz nach Wunsch.
Ofen auf 200 C Grad aufwaermen und die Broetchen ca 20 Minuten darin braun backen.
Nun kann man die Broetchen beliebig fuellen. Ich liebe dazu Salami oder ganz einfach nur Butter! Versucht sie mit Kaese oder Lachs! Bei einem Freund kriegt man Schabzieger dazu mmmmmmm……..

For 8-10 Bread Rolls:
350 g strong Bread Flour
150 g Spelt Flour
20 g Butter, melted
7 g dried Yeast
15 g Salt
1 tbsp Honey
275 g warm Water

Make a bread dough with these ingredients and knead well together. Let rest covered for 20 minutes.
Knead the dough again, then cut it into 8-10 same size pieces. Form bread rolls, longish sticks or prezels with those pieces. Let rest covered again for 10 minutes.
Meanwhile heat the Laugen up. As we don’t get the real Laugen in Asia I used 1.5 L water with 2 heaped tbsp of Baking Soda.
The formed bread rolls or prezels are now put into the simmering Laugen liquid for approx. 30 seconds. Then remove them carefully with a slotted spoon. Be careful if you use Laugen, this can burn your fingers. Best use gloves.
Put the bread rolls onto a baking tray and make decorative cuts. You can now sprinkle them with coarse sea-salt. Pre-heat the oven to 200 C and bake the bread rolls for 20 minutes.
Now you can fill the bread rolls with whatever you like. You can eat them warm or cold. I love them slightly warm with butter and Salami, but try them with cheese, salmon or Schabziger (sap sago Cheese from Switzerland), so yummmmmmyy….
