
Tomato Bruschetta

Who needs a quick starter, is at the right place! Tomato Bruschetta!
Bruschetta, please say Brusketta not Brushetta!, are breads topped with salty ingredients. Very simple, very rustic and very good! You can use anything to top them, mushrooms, Anchovies, roasted vegetables and definitely tomatoes!
I mix them with garlic, I think they need this! And I never use toast bread! That is no Italian bread. I use real dark bread slices, which I roast first!

Ingredients
4 large Slices dark Bread
some Olive oil
4 Tomatoes
4 Garlic cloves
Salt and Pepper
Basil Leaves
Instructions

Step 1
Brush both sides of the bread slices with a little olive oil, then roast briefly on both sides in a shallow pan. Put to one side.

Finely chop the tomatoes and garlic and mix together. Chop the basil leaves and add, season with salt and pepper. Add a drizzle of olive oil and leave to marinate briefly.

Just before serving, cut the slices of bread in half and top with the tomatoes. Serve immediately.
