Öpfelschnitz (Apfelschnitze) sind sehr typisch schweizerisch! Meine Schwiegermutter, eben eine richtig typische Schweizerin, tischt sie zu Teigwaren (Hörnli) oder Kartoffelschnitzen auf. Mein Schwiegerpapa liebt sie. Für mich, italienisch aufgewachsen, war das mehr als sonderbar, denn süsse Früchte sind für mich ein Dessert und gehören nicht zu Teigwaren, aber so hat eben jedes Land seine Spezialitäten. Öpfelschnitz (Apple Slices) are really typical Swiss! My mother-in-law, a typical Swiss lady, serves them to pasta (Hörnli – Elbow pasta) and potato dishes. My father-in-law loves them!! For me, growing up in an Italian household, this was a little strange, then sweet fruits are being served as dessert in Italy. But each country has its own traditions! 

Oepfelschnitz ~ Typisch Schweiz!

Man braucht:
6 Äpfel, am besten festkochende
1 Zitrone
1 Zimtstange
100 g Zucker
200 ml Apfelsaft

4-6 Schalenstreifen von der Zitrone schneiden und zur Seite geben, die Zitrone ausdrücken. Die Äpfel schälen und in Schnitze schneiden. Sofort im Zitronensaft einlegen. Den Zucker in einem Topf erwärmen bis er karamellisiert. Mit dem Zitronensaft und dem Apfelsaft ablöschen. 
Die Zimtstange und die Zitronenschalen dazu geben. Die Apfelschnitze auch dazu geben und ca 12-15 Minuten köcheln lassen. Apfelstücke sollten noch etwas Biss haben und nicht auseinanderfallen. 
Die Öpfelschnitz mit Kartoffelklössen, Kartoffelbrei oder Hörnli auftischen. Meine werden zu einer Berner Schlachtplatte mit vielen verschiedenen Würsten aufgetischt. Sie können kalt oder leicht gewärmt aufgetischt werden.

You need:
6 Apples, not the soft ones!
1 Lemon
1 Cinnamon stick
100 g Sugar
200 ml Apple Juice

Cut 4-6 slices off the skin of the lemon and set aside. Keep the juice of the lemon. Peel the apples and cut them into slices, put them into the lemon juice. Heat the sugar in a pot and let slightly caramelize, add the lemon juice and the apple juice. Add the cinnamon stick and the lemon peels, then add the apple slices. Let simmer for 12-15 minutes. The apple slices should not fall apart.
The Swiss serve the apple slices to pasta, boiled potatoes or mashed potatoes. I will serve mine with a typical Swiss dinner of different sausages and potatoes. You can serve them warm or cold.
