Wieder bringe ich Euch eine richtig heftige Suppe, eine Italienische Wurst-Kartoffelsuppe, danach ist man wirklich satt. Und wieder habe ich sie für eine ganze Mannschaft gekocht, wie die Zuppa Toscana! Es macht Spass, solche Suppen zu kochen. Man kann nämlich all das zugeben, was man mag. Oder gar Reste aufbrauchen, das habe ich mit dem halben Blumenkohl gemacht, den ich noch im Kühlschrank hatte. Würze gibt die italienische Bratwurst und viel, viel Chili!

And again, I bring you a very heavy soup; after a big plate full you will not be hungry anymore! Again, I cooked it for a big crowd, like the Zuppa Toscana! It’s fun to cook these soups, as you can add whatever you like most. Or you can use up leftovers, like me, I still had half a cauliflower in the fridge. Seasoning is given by the Italian sausage and the loads of chili I used!

Italienische Wurst-Kartoffelsuppe

Für 8 Personen:
500 g Italienische Schweinsbratwürste
50 g Speckwürfel
4 ganze Knoblauchzehen
1 grosse Zwiebel
½ Blumenkohl
Salz und Pfeffer
Paprika
Rosmarin
2 EL Chiliflocken
2-3 Liter Rinderbrühe (je nachdem wie dick oder dünn man die Suppe will)
800 g Kartoffeln
1 Bund Petersilie
150 g Spinatblätter (ich habe eine Packung mit Wurzelgemüse Blättern gefunden, also Randen etc. Blätter)

Die Zwiebel grob hacken und mit den Speckwürfeln anbraten. Die Würste aus der Haut drücken und das Fleisch in kleine Kugeln formen, dazu geben. Knoblauchzehen dazu geben. Alles gut braten.
Dann den Blumenkohl klein schneiden und dazu geben, mitbraten. Sobald alles gut gebraten ist, die Gewürze zugeben. Gut mischen. Die Brühe dazu giessen und alles aufkochen lassen. Unterdessen die Kartoffel gut abbürsten, dann mit dem Gurkenhobel direkt in die Brühe raffeln. Alles ca. 30 Minuten kochen lassen, dann die gehackte Petersilie und die ganzen Spinatblätter zugeben. Kurz aufkochen lassen und heiss servieren!

For 8 Persons:
500 g Italian Pork Sausages
50 g Bacon Bits
4 Cloves of Garlic
1 big Onion
½ Cauliflower
Salt and Pepper
Paprika
Rosemary
2 tbsp Chili flakes
2-3 Liter Beef Broth (depending on how thick or thin you like the soup)
800 g Potatoes
1 Bunch Parsley
150 g Spinach Leaves (I found a bag of mixed root leaves)

Chop the onion and fry it with the bacon bits in a deep pan. Push the sausage meat out of the casings and form small balls with it, add it. Add the whole garlic cloves and fry all very well.
Cut the cauliflower into small pieces and add them. As soon as everything is fried well, add the seasoning, and mix well. Pour the broth in and bring to a boil. Meanwhile brush the potatoes well, then slice them with the thin mandolin directly into the broth. Let cook for 30 minutes, add the chopped parsley and the spinach leaves and bring back to a boil. Serve hot!
