Italienische Wurst Bolognese – Italian Sausage Bolognese

2 Mins read

Everyone has his/her own way to cook tomato sauce. Some say the best is the plain tomato sauce, some love the traditional bolognese, some prefer the amatriciana sauce with bacon and I, well, I love my sausage bolognese!
The Italian pork sausage is seasoned with chili and has a slight sting, which my men love! Here I show you how to make your own sausage! I usually cook a big batch so I can freeze some in case of unexpected visitors. So I am always prepared!

2 Knoblauchzehen, fein gehackt
1 kleine Zwiebel, fein gehackt
1 Bund Petersilie, gehackt
1 gruene Chilischote, gehackt

Evt etwas Wasser zugeben. Die Petersilie zugeben und vermischen.
Mit beliebiger Pasta, Gnocchi oder Spaetzli servieren.

1 kg spicy Italian Pork Sausages (or my homemade Italian Sausages, or raw Italian pork sausage, but then you might have to add chili)
2 cloves of Garlic, chopped
1 small Onion, chopped
1 bunch of Parsley, chopped
1 green Chili, chopped
1 Glass (500 g) Homemade Tomato Sauce (or add 800 g of peeled chopped Tomatoes and cook them with the meat until they fall apart)
Salt and Pepper
Rosemary and Oregano
50 g Tomato Puree
some Olive Oil

Fry the garlic and onion in a little olive oil, than add the meat from the sausages (push it out of their skin). Fry the meat until well browned and chop with a wooden spoon until the meat looks like ground meat.
As soon as the meat is browned add the tomato sauce and the chopped green chili. Add the tomato puree, season well and let cook on small flame for 1.5 hours. Mix from time to time to not burn it; you might have to add some water. Then add the chopped parsley.
Serve with pasta, Gnocchi or Spaetzli.
