Nasi Goreng – Indonesian Fried Rice

Nasi Goreng – Indonesian fried rice, the way I cook it. Nasi Goreng translates as fried rice. It mainly consists of rice with a little meat and onions as a vegetable side dish. What distinguishes this dish from other fried rice dishes is the sauce made from kecap manis, a sweet soy sauce that turns the rice dark brown and caramelizes during cooking.

It is typically served with a fried egg and a side dish of fresh cucumber and tomato. Shrimp Chips are also a great accompaniment. It is a complete meal and does not need any other side dishes.

Just like fried rice for the Chinese and Bolognese sauce for the Italians, every family has its own recipe that has been passed down through generations.

This recipe is also part in Volkermampft’s culinary world tour which is traveling to Indonesia this month.

Ingredients

  • 300 g long-grain white Rice, cooked 1 day ahead

  • 2 Chicken Breasts

  • Salt and Pepper

  • Paprika

  • 1 red Chili

  • 3 Shallots

  • 4 Garlic cloves

  • 1 tsp Shrimp Paste I used 1 can Anchovies!

  • 4 tbsp Kecap Manis (sweet Soy Sauce) If you can’t find this, use regular soy sauce and a little sugar

  • 2 tbsp Soy Sauce

  • 1 tsp brown Sugar

  • 3 Spring onion, chopped

  • ½ small Chinese cabbage, finely sliced

  • Toppings:

  • 4-6 Eggs

  • 1 Tomato, diced

  • ½ Cucumber, diced

  • Shrimp Chips

  • chopped Peanuts

  • Chili Flakes

  • Sambal Oelek

  • Dried fried Onions or Onion rings

  • Dried fried Garlic

Instructions

Step 1

Season the chicken breasts and fry thoroughly in hot oil. Then cut into small pieces. Set aside.

Puree the shallots, garlic, chili, and anchovies or shrimp paste in a blender.

Heat some oil in a wok and cook this paste for 2-3 minutes, stirring constantly, then add the rice.

Add the sweet and other soy sauces and the sugar, mix well and fry for about 5 minutes.

Add the chicken, cabbage and spring onions and fry over a high heat, stirring vigorously, for about 10 minutes.

Place the rice on a large platter and garnish with the shrimp chips, tomato and cucumber pieces, chopped peanuts, fried onions, and garlic.

Meanwhile, fry the eggs in a shallow pan and add them to the dish.
