Five-Spice Shrimp Cakes. Diese “Neuheit” in der singapurischen Küche stammt aus den 50er Jahren. Liu Fan kam aus Fujian nach Singapur und verkaufte dort als Hawker Five-Spice Shrimp Cakes und getrockneter Tofu. Wenn irgendwo eine grosse Show oder ein Anlass war, hat er seinen mobilen Karren abgestellt und seine Delikatessen verkauft. Vor allem war sein Tofu geliebt und so nannte man ihn nur noch „getrockneter Tofu“. Sein Sohn, Liu Fuji sagt: Mein Vater stellte sein Zelt auf bewegliche Anhänger und immer, wenn ein Sturm kam, mussten wir den davon fliegenden Zelten nachrennen! Es war nicht einfach!“
Ich habe sie nachgekocht und sie sind wirklich extrem einfach und gut! Sie nehmen am Blogevent die Kulinarische Weltreise von Volkermampft teil, der diesen Monat nach Singapur reist.

This „novelty“ in Singaporean cuisine dates back to the 1950s. Liu Fan came to Singapore from Fujian and sold Five-Spice shrimp cakes and dried tofu as a Hawker. Whenever there was a big show or occasion somewhere, he would park his mobile cart and sell his delicacies. Most of all, his tofu was beloved and so people just called him „dried tofu“. His son, Liu Fuji says, „My father put his tent on mobile trailers and whenever a storm came, we had to run after the tents flying away! It wasn’t easy!“
I have recreated them, and they really are extremely easy and good! You are taking part in the blog event the Culinary World Tour by Volkermampft, who is travelling to Singapore this month.
Für ca. 12 Shrimp Cakes:
700 g geschälte, rohe Garnelen, Vene entfernt
1 Ei
1/3 rote Peperoni, ganz klein gehackt
3 EL gehackte Koriander Blätter
½ Limette, den Saft
1 TL Fisch Sauce
1 TL Five-Spice Pulver (vom Chinesen)
2 EL Mayonnaise
120 g Panko (ich nahm glutenfreie)
1 TL Sriracha Sauce
Alle Zutaten in den Mixer geben und mixen, oder im Hacker klein hacken. Zugedeckt 30 Minuten im Kühlschrank ruhen lassen.
Chili Aioli:
100 g Mayonnaise
3 EL Thai Sweet Chili Sauce
1 TL Sriracha
1 TL Sesam Oel
Limettensaft nach Wunsch
Alle Zutaten zum Dip zusammen mischen. Im Kühlschrank lagern.
Oel in einer weiten Pfanne erhitzen und Esslöffel grosse Häufchen erst in Panko/Paniermehl wenden, dann im Oel beidseitig schön braun braten. Man kann sie warm oder kalt mit dem Aioli servieren.

For approx. 12 shrimp cakes:
700 g peeled, raw Shrimps, vein removed.
1 Egg
1/3 red Chili, very finely chopped
3 tbsp chopped Coriander Leaves
½ Lime, the juice
1 tsp Fish Sauce
1 tsp Five-Spice Powder (from the Chinese)
2 tbsp Mayonnaise
120 g Panko (I used gluten-free)
1 tsp Sriracha Sauce
Put all the ingredients in a blender and mix, or chop in a chopper. Cover and leave in the fridge for 30 minutes.
Chili Aioli:
100 g Mayonnaise
3 tbsp Thai Sweet Chili Sauce
1 tsp Sriracha
1 tsp Sesame Oil
Lime juice as desired
Mix all the ingredients together to make the dip. Store in the fridge.
Heat the oil in a wide frying pan and roll tablespoon-sized piles in the panko/ breadcrumbs, then fry in the oil until brown on both sides. You can serve them warm or cold with the aioli.
