I’m a big fan of eggplants, I could eat them every day. So it’s no surprise to find a lot of eggplant recipes on this site. I was holding back on them but now it’s time to post them.
Many people think eggplant is a fatty vegetable but this is not true. It depends on the cooking style and on how much oil you use. The eggplant is like a sponge and sucks up all oil in the pan, so be careful. It depends also on what you serve them with, lots of cheese or creamy sauces, it adds calories. I usually use a cooking spray to fry them. In this recipe the eggplants are not fried but cooked in water and of course you can see the Italian influence!

Man braucht fuer 2 Personen:

For 2 Persons:
12 Thai Eggplants (the small 10-12 cm long ones, 2-3 cm thick)
4 Cherry Tomatoes
some basil leaves
1 clove Garlic
1 tbsp Mustard
3 tbsp Mayonnaise
2 tbsp Milk
Salt and Pepper
some Chili flakes
a little Olive Oil

Wash the eggplants and cut the stem off, then cut them lengthwise into quarters. Boil them for approx 7-10 minutes in salted water. Do not overcook them or they will fall apart. Drain them in a sieve and let them cool down. So all excess water will drip out.
Press the garlic and mix it with all the other ingredients to a salad sauce. Put the eggplants on a plate, pour the salad sauce over them, sprinkle with the cut cherry tomatoes and basil leaves and serve.
This salad is perfect to any meat or grilled foods.
