When I’m in Europe I love the fresh and really tasty tomatoes! Here in Asia good tomatoes are expensive and mostly they don’t taste of anything. I used to know a market lady who had OK tomatoes, but she is gone. This is so frustrating!
So, I baked a small tomato quiche and believe it or not, I ate the whole quiche myself! It was so good!

Fuer 2 Personen (oder einen Fresssack wie mich):
1 kleine fertig mit Blaetterteig belegte Quicheform (ca 26 cm Durchmesser)
4 grosse Tomaten
1/2 kleine Zwiebel, fein gehackt
1/2 Bund Petersilie, gehackt
1/2 Mozzarella Kugel, gerieben

Heiss servieren.

For 2 Persons (or for such a greedy person like me):
1 ready rolled small Puff Pastry quiche dish (approx 26 cm diameter)
4 big Tomatoes
1/2 small Onion, chopped
1/2 Bunch Parsley, chopped
1/2 Mozzarella Ball, grated
Salt and Pepper

It’s very quick:
Prick the puff pastry to prevent it from bubbling up. Cut the tomatoes into halves and slice them. Arrange them onto the pastry. Season with salt and pepper. Sprinkle the chopped onion and parsley onto them and grate the Mozzarella on top. Bake in the oven at 200 C for 30 minutes. Serve hot!
